The natural richness of the lamb is beautifully balanced by the sweet heat of the chilli glaze, creating a delicious combination of caramelised flavours and subtle spice. Ingredients

For the Lamb Chops

  • 8 lamb loin chops
  • 1 tbsp olive oil
  • 1 tsp sea salt
  • ½ tsp freshly ground black pepper
  • 1 tsp smoked paprika
  • ½ tsp garlic granules
  • 1 tbsp fresh thyme leaves

For the Smoky-Sweet Chilli Sauce

  • 4 tbsp sweet chilli sauce
  • 1 tbsp honey
  • 1 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tsp smoked paprika
  • 1 tsp chilli flakes (adjust to taste)
  • 1 garlic clove, finely minced
  • 1 tsp sesame seeds (plus extra for garnish)

To Serve (Optional)

  • Crisp fennel and herb salad
  • Roasted baby potatoes
  • Steamed jasmine rice
  • Fresh lime wedges

Method

Step 1 – Prepare the Lamb

Pat the lamb chops dry with kitchen paper before rubbing them with the olive oil, salt, pepper, smoked paprika, garlic granules and fresh thyme. Leave to marinate for 15–20 minutes at room temperature.

Step 2 – Make the Sauce

In a small bowl, whisk together the sweet chilli sauce, honey, soy sauce, lime juice, smoked paprika, chilli flakes, garlic and sesame seeds until fully combined.

Reserve half of the sauce for serving and set aside.

Step 3 – Sear the Lamb

Heat your frying pan over a medium-high heat until hot. Add the lamb chops in batches if necessary, ensuring they aren't overcrowded.

Cook for 3–4 minutes on each side for medium-rare or 4–5 minutes for medium, depending on their thickness.

During the final minute of cooking, brush the lamb generously with the smoky-sweet chilli sauce, allowing it to caramelise beautifully.

Step 4 – Rest and Serve

Transfer the lamb chops to a warm plate and allow them to rest for 5 minutes before serving.

Drizzle over the remaining sauce and finish with an extra sprinkle of sesame seeds and fresh thyme leaves. Serve alongside a crisp salad or roasted potatoes for a restaurant-worthy meal at home.
